I'm a math professor and while I get invited to those textbook publisher conference (free hotel, food, gift), I never volunteer to attend as I rather spend more time with my 4 year old daughter.I can tell you this, I hate those textbooks and our department tried several times to adapt free textbook (open sourced and those written by our own faculty but given to students for free or just printing cost).

Why? One of the biggest reasons are regional accreditation status. Publishers have far more resource to keep up with accreditation/state requirement and can always keep their content up to date. Whereas it is a gamble for college admin to allow faculty to write their own textbook. And with cut in education funding, we simply can't afford to make that an additional duty for faculty since we are all teaching/advising/researching more due to cut backs.
